Mond Brier: Sauvignon Blanc and Pinot Gris are pressed separately and fermented at a low temperature of 6°C in stainless steel tanks. Before fermentation is complete, the Mond Brier is transferred to barrels for aging. Before bottling, the barrel aged Mond Brier is blended with the stainless steel fermented Sauvignon Blanc and Pinot Gris, with a blend ratio of approximately 80% Mond Brier, 9% Sauvignon Blanc, 9% Pinot Gris, and 2% other varieties. The wine has a slight, positive volatile acidity that enhances the umami flavor, spreading across the palate. It offers aromas of white peach, Muscat, fresh herbs, and subtle oak from the barrels without any toasty notes.
