The MATT KYOTO team recently had the honor of visiting Yamanashi, the prefecture with the highest concentration of wineries in Japan. We were invited to Château Katsunuma, led by its current owner, Hideka Imamura, whose label Toriibira Imamura is one of the signature wines featured on our list. This visit offered us a rare opportunity to experience firsthand the philosophy, craftsmanship, and terroir behind their winemaking.
Walking through the vineyards, exploring the cellars, and immersing ourselves in the atmosphere where each bottle is born allowed us to rediscover what truly defines the value of wine. Our mission is to bring that inspiration directly to our guests.

We carefully study which ingredients resonate most beautifully with each wine, how temperature affects expression, and how the story of the wine can intertwine with the seasonality and character of our dishes.
