This is a rich and slightly acidic Junmai Daiginjo, matured for six months in oak barrels previously used for the white wine of Burgundy’s renowned “Domaine Ramonet.” This unique aging process enhances its concentration as the sake evaporates, allowing the oak barrel’s distinctive notes of orange, nuts, vanilla, and wood to blend seamlessly into the sake.
