A red wine crafted from Merlot grown in Iga, Mie Prefecture, blended with Kerner sourced from Yoichi, Hokkaido. The Merlot is destemmed and crushed, then fermented at low temperature in fiber tanks with gentle hand punch-downs twice a day. Pressed while sugar still remained, the wine continues to ferment anaerobically in stainless steel.
This process results in a subtly wild, southern-French-natural-wine–like character, showing lifted red-fruit aromatics with a touch of volatile acidity that contributes pleasant umami on the palate.
A small portion of barrel-aged and stainless-steel–aged Kerner is blended in—much like adding Viognier to Syrah—bringing aromatic lift and textural finesse.
