A medium-bodied red wine made from grapes planted in Tenri, Nara in 2018 and grown using biologic farming practices. Bijou Noir, Merlot, and Yama Sauvignon were destemmed and fermented in stainless steel with about two weeks of maceration, then gently pressed. After initial tank aging, approximately 5% Pinot Noir was blended and the wine was further matured in oak.

It shows a touch of positive volatile acidity that enhances the juicy umami spread across the palate, with firm tannins characteristic of Bijou Noir. Light sediment remains, and the wine is best enjoyed gently unfiltered for a relaxed, expressive experience.
