Japanese Culinary Innovation from Street to World

Our mission is to reimagine Japanese food culture through immersive experiences and storytelling. We believe food is not just about flavor—it’s about space, narrative, and human connection.That’s why we are developing our vision in three distinct stages: Restaurant 1.0, 2.0, and 3.0—each representing a step forward in the evolution of culinary experience, from the streets of Japan to the cities of the world.


Restaurant 1.0 GENESIS|Roots Reimagined

Reinterpreting Japan’s B-grade gourmet culture through the spirit of Chinese xiaochi markets, embodied with Japanese quality. Inspired by food stalls and casual eateries, we will franchise compact, accessible restaurants—focused not only on being “cheap and tasty,” but also on preserving local culture and making entrepreneurship more inclusive. From 2026 onward, we plan to expand this “neo-street food network” across Japan and globally.


Restaurant 2.0 Modern Japanese Dining|From Local Soul to Global Table

Restaurant 2.0 reimagines regional Japan through local ingredients and place-based dining. Each location draws inspiration from its natural surroundings and culinary heritage—offering menus that reflect the essence of the land and culture.Rather than transporting food, we bring people to where flavor is born—inviting global guests to taste Japan, one region at a time.Launched in Kyoto in April 2023, with future plans to expand to international regional cities.


Restaurant 3.0 Gastronomic Show|Where Experience Takes the Stage

Restaurant 3.0 redefines Japanese dining as immersive entertainment. Born in Tokyo, this stage-style restaurant concept combines culinary excellence with performance, design, and rhythm—delivering a multi-sensory dining experience to global capitals. Opened in January 2026 in Tokyo, with future launches planned in New York, Paris, and Singapore.
